We literally have so many tomatoes from my garden now (they are growing out of control - they are SO huge) we need to keep coming up with new ideas on how to use them. Tomatoes are amazing because they can be used in SO many different dishes and they add so much flavour so you can keep your meals interesting even when you only have a few ingredients.⁣ ⁣ At the moment, I am using chopped up tomatoes for Arna’s pasta, we eat them in salads, in all of our pasta sauces and we stuff them to make yemista (tomatoes stuffed with rice and vegetables) - but they are actually SO good when they are eaten fresh. We don’t keep them in the fridge because they keep their flavour better at room temperature. ⁣ ⁣ I love this salad because it is SO simple - you can make this with:⁣ ✅ Tomatoes⁣ ✅ Mozzarella or burrata⁣ ✅ Fresh basil⁣ ✅ Olive oil⁣ ✅ Balsamic vinegar⁣ ✅ Salt and pepper⁣ ⁣ I usually slice the tomatoes, salt them and leave them for an hour. Add the sliced mozzarella, basil, olive oil, balsamic vinegar, cracked pepper and serve straight away! ⁣ ⁣ Photo credit: @cravinghomecooked
